From the kitchen of Angelina Amalfi-- ANGIES BASIC BRUSCHETTA Day old French or Italian bread Cut bread into 1/2-inch thick pieces, about 3 inches square (the shape of the loaf will determine the size and shape of your pieces)--just dont make them too big. Preheat a broiler or toaster oven. Toast the bread on both sides until golden. While warm, rub one side of each slice with the cut garlic. Drizzle with olive oil, using about 1 teaspoon per slice. Sprinkle with salt if desired. Add toppings, if desired. Topping suggestions (add as many or as few as you wish): While warm, sprinkle top with grated Parmesan cheese, oregano, red pepper flakes, chopped fresh basil, diced red onion, diced tomato, black ripe or kalamata olives coarsely chopped or sliced. |
